I've been on a little Italian kick here at Chef Gina's.  I've also been behind on my blogs.   For the past few weeks I've been trying to get these pizzas done with adorable Chef Gina's pizza boxes. Doing about 10 pizzas takes me 5 hours and by the time it's done my back hurts..lol 

But, nothing is better on pizza is a good sauce.   During the summer I like to go to the roadside stands and get fresh vegetables (if I don't grow my own) and make fresh sauce.   I don't have a recipe because I pretty much do it to taste.   

My marinara sauce includes: 

• roma tomatoes
• regular tomatoes
• red wine or white wine
• sugar (helps with the acid)
• onions
• green pepper
• thyme
• oregano
• garlic
• basil
• salt and pepper
• a little oil only for saute veggies
• 1 can of tomato paste

I let it all come to a simmer and thicken with cornstarch if I need it.   I usually freeze alot for us to use later.
